No Bake Oreo Cake

I love rhyming, don't you? Especially rhyming bake with cake! But as much as I love rhyming, I love Oreo's even more. So when I came across this recipe for an icebox cake that tastes just like one huge oreo, there was no doubt in my mind that I HAD to make it. And when I say make, all I really mean is making a ton of whipped cream and layering it with chocolate Oreo tasting wafers. It is so easy! and quite impressive and beautiful when it's completed.

To make it even more impressive I added little flags, which were just about as easy to make as the cake. Just some ribbon (in this case plaid, since the cake was for a plaid pool party), three chopstick, a needle and thread. I had an elaborate plan to cover the ribbon in a glue and water mixture to make them hold shape, but since I used wired ribbon there was no need!

Anyways, here is the very short yet scrumptious recipe.

No Bake Oreo Cake
*adapted from Magnolia Bakery

Ingredients
  • 2 packages of Nabisco's Famous Chocolate Wafers
  • 3 cups of heavy whipping cream
  • 3 tablespoons of sugar
  • 1 tablespoon vanilla extract

Directions

1. Whip the cream, sugar and vanilla together on high speed with the whisk attachment of a stand mixer, or hand beaters, until soft peaks form.

2. On a cardboard cake round, or cake stand, make a circle out of 7 wafers, with one of the wafers in the middle of the circle. Spread about 1/2 cup of the whipped cream on top of the cookie circle leaving the far edges of the cookies uncovered. Repeat this process 11 times ending with a thick coat of whipped cream on top. You will have 4 leftover cookies. Refrigerate overnight.

See how every other circle alternates position. This helps to keep it all balanced.

I made homemade Oreos with the leftover wafers :)

3. Finish with crushed leftovers cookies, shaved chocolate or cocoa powder. Add flags, figurines, flowers, etc to make it fabulous!
