Breaking Seasonal Boundaries with...Chocolate Chip Praline Oatmeal Cookies


As much as I revel in the nostalgia of season specific desserts, sometimes I just want cotton candy in the winter, pumpkin pie in the spring and ice cream pretty much any time of the year. So when I got the craving for oatmeal cookies with warm spices and praline pecans, I said to myself, "What the heck! A girls gotta eat what a girls gotta eat."


And I'm glad I didn't let seasonal stereotypes stifle me because they were great! So chewy, chocolately and crunchy with a slight hint of nutmeg. Definitely a cookie that would make me feel right at home in October but also very delicious in May.


So break the chains of "seasonalism" and bite into my Chocolate Chip Praline Oatmeal Cookies.


Chocolate Chip Praline Oatmeal Cookies
* makes 15-18 cookies



Ingredients
  • 1/2 C unsalted butter, softened
  • 1/2 C sugar
  • 1/2 brown sugar, packed
  • 1 egg
  • 3/4 tsp vanilla
  • 1 1/4 C quick oats
  • 1 C whole wheat flour (or all-purpose)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/8 tsp nutmeg
  • 3/4 C semi-sweet chocolate chips (Guitard highly recommended)
  • 1/2 Cup Praline Pecans, chopped
Directions

1. Preheat the oven to 350 and prepare two baking sheets with silicon mats or parchment. 

2. Beat both sugars and the butter in the bowl of a stand mixer with a paddle attachment until creamy, about 3minutes. Add the egg and beat until incorporated. And the vanilla and beat until incorporated. 

3. Whisk the oats, flour, baking powder, baking soda, salt, nutmeg and cinnamon together in a med. bowl. Slowly add it to the butter mixture and beat on low until just incorporated. Lastly, stir in the chocolate chips and pecans with a wooden spoon.


4. Bake for 10 minutes then cool on a cooling rack. They are really delicious warm and days after you've made them.

    I'll have to try this recipe-- we love us some oatmeal cookies 'round here.
